Prep and Cook Time: 15 minutes
Ingredients:
- 5 TBS low sodium chicken broth or vegetable broth
- 1/2 cup crimini mushrooms, sliced
- 1 bunch spinach
- 1 TBS Mediterranean Dressing
- 2 omega-3 rich eggs, poached
Directions:
- Heat broth in a 10-12 inch stainless steel skillet.
- Healthy Sauté mushrooms for 4 minutes over medium heat, stirring frequently.
- Add the spinach and stir for 1 minute, until tender.
- Toss with Mediterranean Dressing.
- Top with two poached eggs.
Notes:
- Adding baby spinach at the end of cooking time is a great way to incorporate extra vegetables.
- Ensure the spinach is tender before tossing with dressing.
