  1. Prepare the Chicken: If using bone-in, skin-on chicken, you can brown it in the Instant Pot using the sauté function for a few minutes per side. This step is optional but enhances flavor.
  2. Combine Ingredients: In the Instant Pot, add the chicken, soy sauce, vinegar, water, garlic, bay leaves, peppercorns, and brown sugar (if using).
  3. Pressure Cook: Close the Instant Pot lid and ensure the valve is set to sealing. Select the "Pressure Cook" or "Manual" function and set the timer for 15 minutes.
  4. Natural Pressure Release: Allow the Instant Pot to naturally release pressure for 10 minutes. Then, carefully release any remaining pressure.
  5. Simmer and Reduce: Open the Instant Pot. If the sauce is too thin, use the sauté function to simmer it for a few minutes until it thickens to your desired consistency.
  6. Serve: Serve the chicken adobo over cooked rice, spooning the sauce over the chicken.
