Ingredients
- 2 lbs chicken thighs or drumsticks (bone-in, skin-on preferred)
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1/2 cup water
- 1 head of garlic, cloves separated and lightly crushed
- 2 bay leaves
- 1 tablespoon whole peppercorns
- 1 tablespoon brown sugar (optional)
- Cooked rice, for serving
Instructions
- Prepare the Chicken: If using bone-in, skin-on chicken, you can brown it in the Instant Pot using the sauté function for a few minutes per side. This step is optional but enhances flavor.
- Combine Ingredients: In the Instant Pot, add the chicken, soy sauce, vinegar, water, garlic, bay leaves, peppercorns, and brown sugar (if using).
- Pressure Cook: Close the Instant Pot lid and ensure the valve is set to sealing. Select the "Pressure Cook" or "Manual" function and set the timer for 15 minutes.
- Natural Pressure Release: Allow the Instant Pot to naturally release pressure for 10 minutes. Then, carefully release any remaining pressure.
- Simmer and Reduce: Open the Instant Pot. If the sauce is too thin, use the sauté function to simmer it for a few minutes until it thickens to your desired consistency.
- Serve: Serve the chicken adobo over cooked rice, spooning the sauce over the chicken.
Notes
- For a more intense garlic flavor, add more garlic cloves.
- Adjust the soy sauce and vinegar ratio to your taste.
- If you prefer a sweeter adobo, increase the amount of brown sugar.
- The browning of the chicken at the start, will give the chicken a better texture, and enhance the flavor of the dish.
- Allowing the pressure to release naturally for 10 minutes helps keep the chicken tender.
